Apple Date Coffee Squares
A cozy twist on two beloved classics — date squares and apple crumble — baked into one perfect little treat. Our rich date filling is paired with our Sunny’s House medium roast, adding a slight bitterness and balancing out the sweetness of the dates. Layered with tender spiced apples and a buttery crumble topping, each bite tastes like fall comfort.

Ingredients
Date filling
- 1-½ cups pitted dates, chopped
- ½ cup brewed Sunny’s House medium roast coffee
- 1 tbsp freshly squeezed orange juice
- 1 tsp vanilla extract
- ¼ tsp baking soda
Apple filling
- 3-4 large Granny Smith or Golden Delicious apples, peeled and chopped
- 1 tbsp all-purpose flour
- ¼ cup brown sugar
- 2 tsp apple cider vinegar
- ½ tsp ground cinnamon
- ¼ tsp ground nutmeg
Crumble topping
- 1-½ cups quick-cooking oats
- 1 cup all-purpose flour
- ¾ cup brown sugar
- ½ tsp ground cinnamon
- ¼ tsp baking powder
- ½ tsp kosher salt
- ¾ cup unsalted butter, room temperature

Directions
1. Preheat the oven to 350°F. Grease an 8-inch square baking tin with butter and line with parchment paper.
2. Prepare the date filling. Add chopped dates to a saucepan along with coffee, fresh orange juice, vanilla extract and baking soda.
3. Cook date mixture over medium heat for about 10 minutes or until dates are broken down and mixture is thickened. Remove from heat and let cool.
4. Prepare the apple filling. Add peeled and chopped apples to a medium bowl, along with flour, apple cider vinegar, spices and brown sugar. Mix well until the apples are completely coated. Set aside.
5. Lastly, prepare the crumble. In a medium bowl, combine flour, oats, brown sugar, cinnamon, baking powder, salt and butter. Use your hands to evenly combine all ingredients until the mixture is crumbly.
6. Gently press half of the crumble mixture into the bottom of the square baking pan. Add the date filling and spread evenly across the crumble base before adding the apple filling. Top with remaining crumble mixture and spread evenly across the top.
7. Bake for 50 minutes or until golden brown. Let cool in the pan for at least 30 minutes before removing the squares from the pan and slicing into 16 squares.
